Ethiopia is the birthplace of coffee and has developed a reputation for producing high-quality coffees with diverse varieties resulting in distinctive Ethiopian coffees. The Guji region is renowned for its high altitude and rich volcanic soils resulting in intense and unique flavour profiles. Most producers in the area are small-hold farmers working with local washing stations.

Once the cherries are sorted, the coffees are laid out to dry on raised beds which are turned regularly to maintain consistent drying. Once the beans reach the required moisture content, they are stored and sent to the milling stations ready for exporting.
